Dear all,
FAO´s activities on nutrition, including food composition, are being evaluated. I wish to invite you therefore to provide your opinion on FAO/INFOODS work on food composition through https://www.surveymonkey.com/r/6C5RRTY . It will not always be possible to indicate that you are addressing specifically food composition - so you might wish to share your observations on food composition in the free text fields. The more respondents the better...

Dear all,

In Switzerland, we have a project on vitamin analyses from Swiss foods. We have now first results and want to enter them into the database.
We would like to do this with a decision tree.
Could someone support us with an example of a decision tree what we need to think about and what are inclusion or exclusion criteria to import the analysed values in the database.
I would be very grateful for your support.
Many thanks and best wishes,

Dear INFOODS community,

I am looking for nutrient composition of stew sauces: in Kenya, we have found that sometimes infants are served the soup of a bean/meat/green leaves/fish stew (without the solid pieces). These are more nutrient dense and consistent than a simple stock (because it often contains onion, tomato, oil, and nutrients leaked from the meat/fish/beans/greens) but we cannot use the full recipes we have collected, because of course it is exempt from the most nutrient dense components.

I have a colleague who is looking for the nutrient content of aster scaber, a Korean vegetable. She said the Korean name is chamchwi. we are having an internal discussion on how to calculate the protein content for labelling purposes based on the European legislation for supplements consisting solely from amino acids and/or other N-containing substances.

Can you just sum up the amino acids? Or only the proteinogenic AA? Or do you have to apply the general factor of 6.25? Would you apply the factor to total N or only to N from proteinogenic AA? Or....

Dear all,
It is with great pleasure to announce that we have published the new FAO/INFOODS/IZiNCG Global Food Composition Database for Phytate – Version 1.0 (PhyFoodComp1.0) which you can download free-of charge from http://www.fao.org/infoods/infoods/tables-and-databases/faoinfoods-databases/en/

· The PhyFoodComp database is the first global repository of analytical data on phytate in its different forms and determined by different chemical methods, as well as of iron, zinc, calcium, water, and different phytate:mineral molar ratios. This database is important as phytate, mainly contained in pulses and cereals, is considered an anti-nutrient because it interferes with the absorption of minerals, especially of iron and zinc.

Dear Jean,

we analysed different types of salt including sea salts. You can find the results through this link:

Table 2 on page 11 gives you an overview of the iodine contents of the analyses salts. And there is also a short discussion of iodine content in salts on pages 12/14:

On the other hand, non-fortified salts (including sea salts) do not contain significant levels of iodine although sea salts are thought to be good sources. In sea water, iodine is found in higher quantities than in any other environmental compartment. Sea water contains about 57 μ/L total iodine

history and development of Cuba.

While analyzing the Cuban Alternative Agricultural Movement, Williams

agroecological, permaculture and urban agriculture sectors making up the
alternative agriculture movement had long harbored deep intellectual,
ideological, and ethical interests in agricultural transformation”.

Hi all,

We wanted to share with you today the experiences of our past Food
Sovereignty Tour member, Carrington Morris, on her latest trip to Cuba.

“The average Cuban lost 12 pounds during what Fidel Castro referred to as
the “Special Period,” a span of deprivation that went well into the 1990s.
For survival, the state government made an emergency shift to organic
agriculture practices while the people turned to guerilla gardening—which
soon became state sponsored—transforming abandoned urban lots into farms
and gardens in order to supplement their meager food rations”.

Dear Members,

I am working in compositional studies of coconut milk. All of us aware
coconut milk is an emulsion of lipids and proteins in water and for any
proximates or sugar or phenolics analysis it is essential to remove fat
completely from the milk.

I tried petroleum ether by liquid/liquid partitioning, but it is not giving
proper result. Then tried Methanol:Chloroform mixture. That also not giving
proper result. Since I want the residue after removing fat for other
analysis, kindly suggest any protocol which can work exclusively for
removal of fat from liquid solutions without any loss of other

Dear all,
I would like to wish all INFOODS members and their families all the best for the holiday season and for the new year: peace, health and happiness.

2016 was an intense year and many things have happened in nutrition and food composition. I could see that many countries have published a new food composiiton table or database (FCT/FCDB) or are in the process of updating their FCT/FCDB, have articulated the need for better food composition data (in articles, conferences or meetings) or have elected new INFOODS regional coordinators and vice coordinators. A lot is going on in food

I have a question concerning the energetic value of non digestible
proteins. A nutritional supplement made from cereals and other vegetal
products (see attached) contains digestible and non digestible proteins. Is
there a rule ? Should I count the calories of the crude proteins ? Only
those of the digestible proteins ? Or those of the digestible proteins plus
the fraction of the non digestible proteins which are not sequestrated in
cell walls but that is metabolized in the Krebs cycle (aminoacids in excess
to limiting ones, which cannot be incorporated into proteins).
Thank you,

Dear all,
Thank you all for your comments. I believe that they are all part of the overall picture.
Here are some articles and links on the topic that I received from my colleague in animal production.
I increasingly hear that improved varieties (with higher yield) are associated with increased water content meaning lower nutrient density in general. Probably it would be worth that someone is making a proper literature research and writing a review article on the topic

Greetings, all,

I have a question about the USDA food composition tables. For fiber, the category is entitled "Total Dietary Fiber." Does that include any fiber that might have been added to the food? Are the short chained oligosaccharides included? I'm wondering specifically about inulin and resistant starches but I would assume there are others, too. Would lignin be included? Am I correct in assuming that all the foods were analyzed by the same methods?

Dear All,The attached article makes a scientific case for forest foods (including bush meat),that are part of the traditional and indigenous African foods, how they can sustainably be adapted & promoted , to contribute to meeting food security and nutrient intake among rural communities residing in and adjacent to tropical forests of Africa.
It also scientifically proves otherwise, contrary to past studies, indicating how forest foods can not contribute significantly to achieving nutrition and food security.
