Dear Natalia,
My new book entitled "Lesser-known Nigerian Fruits and Vegetables: Post-harvest Handling, Utilization and Nutritional Value" has just been published by the Ibadan University Press. The book (289 pages) is the very first to bring into one volume the description, composition, post-harvest physiology, post-harvest diseases and desired post-harvest handling practices of lesser-known Nigerian fruits and vegetables and then describes how they are processed into fruit juices, jams, leathers and other products. It contains information on amaranth including chemical composition.
