Dear Longvah,

 

I gather that it is the single vitamers, pyridoxine, pyridoxal, pyridoxamine
and their phosphate esters/glucosides, you want information on and not
(total) vitamin B6?

 

Traditionally, the (total) vitamin B6 was determined using a microbiological
assay (Saccharomyces cerevisiae/carlsbergensis/uvarum a.o.), and I think
that a substantial part of the vitamin B6 values in food composition
databases/tables have been determined with this method – at least in the
databases that I am familiar with..

 

Here and now, I am not aware of a database/table that splits the vitamin B6
up in its vitamers.

 

However, a Google Scholar search reveals quite many scientific papers,
especially on the methods but also content of the B6 vitamers in food
(actually quite a few old papers), so I think that you may have to go the
“hard way” and go through the literature.

On methods from the most recent Vitamin Conference:

and on content in foods, I stumbled over several papers written by Polansky
and Toepfer in the late 1960’s, e.g.

I know that the papers are “old”, but is a starting point.

 

Wageningen UR Library has a nice global search function (see
http://www.wageningenur.nl/en/expertise-services/Facilities/library.htm). A
search with “pyridoxine pyridoxal pyridoxamine food” gives 807 hits. It is
another good way to get a “brief” overview.
