Hi David,

 

The Thai food composition table has information on Pandanus leaves and juice
(http://nutrition.anamai.moph.go.th/FoodTable/Html/gr_04_2.html, load the
page and search (Ctrl+F) for Pandanus).

 

A scolar.google.com search for “banku composition” results in several
journal articles that may be of interest.

Subject: Pandan Leaves and banku

 

Hello:

  We have received some inquires on the nutrient content of pandan leaves
(widely used in southeast Asian cooking as  a flavoring) and banku (a
fermented corn/cassava dough cooked in hot water found in Ghana).   Does
anyone have any information on the nutrient content of these items?
