Dear Yves,

Your question is not completely clear to me, and the background for your question is not that clear either.

I must admit that I am not familiar with the terms “digestible and non digestible proteins” – do you have any definition for these?

You are obviously not referring to (international) standard definitions for protein, like “Kjeldahl nitrogen multiplied by a specific nitrogen-to-protein conversion factor” – or labelling rules?

To my knowledge, there are no official rules concerning “non digestible/digestible proteins” – anyone, please correct me, if I am wrong!

The FAO preferred method for measuring protein is stated as "the sum of individual amino acid residues (the molecular weight of each amino acid less the molecular weight of water); this is the most precise method of calculating the protein content of foods” – and if the amino acid content of the food is not available, “protein based on total nitrogen (N) by Kjeldahl (or comparable method) x a factor (AOAC, 2000) is acceptable.” (see ftp://ftp.fao.org/docrep/fao/006/y5022e/y5022e00.pdf#page=63).

Please add some further information for the purpose of your calculations.

Best regards,

Anders

Subject: non digestible proteins

I have a question concerning the energetic value of non digestible proteins. A nutritional supplement made from cereals and other vegetal products (see attached) contains digestible and non digestible proteins. Is there a rule ? Should I count the calories of the crude proteins ? Only those of the digestible proteins ? Or those of the digestible proteins plus the fraction of the non digestible proteins which are not sequestrated in cell walls but that is metabolized in the Krebs cycle (aminoacids in excess to limiting ones, which cannot be incorporated into proteins).

Thank you,

Yves Michel Darmon
