In addition to Italian data mentioned by Simonetta, you may have a look at the Ciqual French food composition database. We have there data on  :



-          salmon roe https://ciqual.anses.fr/#/aliments/26275/salmon-roe-semi-preserved , with salt, most of data coming from own analysis, 2004



-          lump roe https://ciqual.anses.fr/#/aliments/26004/lump-roe-semi-preserved (from Cyclopterus, lumpus), with salt, most of data from own analysis, 2016.

Hi,

In the Italia Food Composition table BDA (www.bda-ieo.it<http://www.bda-ieo.it>) we have data for

“Bottarga, grey mullet eggs”.

Please note that it is a preserved product (salted), and that for several nutrients (as listed) we completed the data with those from caviar.
