Dear colleagues



 We have listed nutrient values of both carp and sea urchin on Japanese food composition table. We used to eat so called “uni” and “koi” in Japanese letters.



 I just attached these parts, also you can search these from our Ministry’s page.

That is a difficult one ☺



It seems like there is little information on sea urchin eggs (also listed as roe in the literature), but nothing about eggs/roe of the Arbacia stellata (Blainville, 1825; ?Gmelin, 1791). I made a Google and Google Scholar searches on ‘nutrient “sea urchin” eggs roe’ and ‘nutrient “Arbacia stellata” eggs roe’

However, WoRMS lists a series of synonyms for Arbacia stellate (see http://www.marinespecies.org/aphia.php?p=taxdetails&id=513125), so you may find papers on Arbacia stellata under the scientific synonyms(?)



The Korean Standard Food Composition Table (database) has some data on the Anthocidaris crassispina species (see http://koreanfood.rda.go.kr/eng/fctFoodSrchEng/list) and search ‘sea urchin’.



So, unless you find data yourself or get better information from our expert colleagues on the mailing list, I suggest that you use data from other sea urchin eggs/roe, and document that it is data borrowed from another species.
