I think that you may find some nutrient data on these in the feed databases.
Maybe another branch of USDA (animal nutrition) could tell you more.

 

I would guess that you have already tried by now:

A Google search on “barley grass nutrient content” reveals quite a range of
sites, mostly about all the things that barley grass is good for (or
against), but there are a few data in between.

Google Scholar gives quite a few journal papers that seem usable.

 

I have stumbled over this NZ database that has a few data data

alue

 

It is not spot on, but the following article has
http://future.aae.wisc.edu/lgm-dairy/nutrient_composition_of_feeds.pdf has
some other interesting data.
