Steve Kindly note that, Plantains and The "Matooke" or The "East African Highland Cooking bananas or the Green Cooking Bananas found in Uganda and the Great Lakes Region of East and Central Africa,  are Not Plantains.

Brenda is confusing the East African  Cooking "Matooke" bananas, to be Plantains.

Harvestplus food composition tables for Uganda (available online) may have the composition of plantain. There many versions of plantain including "matooke" a staple in Uganda which is unripe plantain.
