You find attached here a map done by GRET in 2008 showing the presence of small local dairies in Senegal 2) Laiterie du Berger`s thiakry is in pasteurized tubes 3) The tube is the typical packaging for sour milk in Senegal. Children tear off with their teeth a corner of the tube to drink the milk. Serena’s report is very interesting from several points of view: • it appears that this small project is the only dairy in Senegal (a country with a population of 14 million) using locally produced milk. • the milk is distributed to children as thiakry a regional product based on yogurt and millet/couscous which is fortified with vitamins. • support is provided a Danone social development fund. • the thiakry is distributed in tubes to the children (see video) In the YouTube Video - School Feeding in Senegal<https://www.youtube.com/watch?v=5ghjLki_NaI#t=11> it is not clear if the thiakry is in UHT or pasteurized tubes. Perhaps someone could answer this?
