Concerning jew’s mallow, are you interested in the composition of leaves or another part of the plant? The Latin name is Corchorus olitorius, and this is also known as jute. You can find some information in our booklet of recipes from Burkina Faso and Benin on page 130 (http://www.nutripass.ird.fr/ressources-liens-utiles/ressources )
