It is not completely clear to me whether your colleague with “whole milk”
means whole/raw milk as delivered from farm to dairy or whole/treated milk
as delivered from dairy to retail/consumer.

At any rate, there are quite some investigations on both, which show changed
over time as well as differences between cow’s races (see
http://extension.psu.edu/animals/dairy/nutrition/nutrition-and-feeding/diet-

rtance-of-milk-fat-and-protein-variation-in-your-dairy-herd/pdf_factsheet ).

 

For whole/raw milk, the Swedish Dairy Association has published several
reports on the nutrient content. The latest I am aware of is by Helena
Lindmark Månsson. The report is from 2009 and in Swedish.

For whole/treated (standardized, 3.5% fat) milk, The national Food Agency of
Denmark published three reports on dairy products in connection with the

Hello Josie,

Thank you for your help today.

The information we are looking for is for international values for energy,
protein, fat and carbohydrate content of whole cows' milk.
We would request lower and upper bound, and the mean value. 
If only protein and fat are available, this information would still be most
useful to us.
(We are already aware of USDA values).

We are involved with a Codex Alimentarius' project to revise Standard 156 on
follow up formulas for young children, and need these values to comment on
the most desirable nutritional composition.
