Dear all, In our Japanese tables, the analytical samples of sweet potato (Ipomoea batatas) (with yellow to whitish-yellow flesh) include cultivars with (reddish) purple-coloured skin and (whitish) cream-coloured skin, because we don't think that nutrient's values (listed in our tables) differ between cultivars with different skin colours.
